Sugarcane pancakes

I love pancakes!  I mean,  who doesn't?  What's better than pancakes?  Oh have I got a a recipe for you :) 


I can't actually take credit for this recipe, my husband figured it out all by himself :) he went out early and bought us dairy/egg/gluten free pancake mix, but they fell apart and tasted.. ugh!!! :( So he made his own recipe up...


I hope you love them as much as we did! 


The Raw Cane sugarcane pancakes 




1 1/2C of self raising flour 

1/2tsp baking powder

1C The Raw Cane plain sugarcane juice

1/2C soy milk

Add water to reach pancake consistency if needed 



On a high heat, melt coconut oil in a shallow fry pan, we used cast iron. Once melted, using a soup ladel, pour one ladel of pancake mixture into middle of pan and form a rough circle. Cook until bubbles form on the upper side of uncooked pancake, then using a flat steel spatula, turn pancake over gently to land on the uncooked side as evenly as possible. Cook on this side for approximate 2-5 minutes, depending on how thick you've made your pancake batter. 


*Please note: Because of the sugarcane juice, your pancake may want to stick to the pan. To combat this, we cooked ours on a very high heat, with a thick batter. Our thinner pancakes weren't lifting properly and stuck to the pan... :( 


Once your pancakes are ready, stack 2, and decorate with strawberries, cinnamon, icing sugar and maple syrup. Then add a squeeze of lemon over the top. 😋 Enjoy!
