I love pancakes!  I mean,  who doesn't?  What's better than pancakes?  Oh have I got a a recipe for you :) 

 

I can't actually take credit for this recipe, my husband figured it out all by himself :) he went out early and bought us dairy/egg/gluten free pancake mix, but they fell apart and tasted.. ugh!!! :( So he made his own recipe up...

This custard I used as my cream filling for homemade donuts on our long weekend. It's something that I've been dying to get to do! Donuts are a kid favourite, and I have four, five including my husband ? 

So on a Sunday night, I decided to make the donuts. Mind you, I started the dough earlier that day... My earlier attempt at donuts dough was a failure to say the least... I was determined my second attempt would be a win!

1 1/2c almond milk

INGREDIENTS:

3/4c butter substitute
2 1/2c sugarcane juice (or 1c maple syrup, 3/4c rice malt syrup, 2c coconut sugar, you can use which ever sweetener you want)
1tsp salt
3tbsp raw cacao powder (or any cacao, I used Dutch, cause I'm Dutch ☺️)
3 flaxseed eggs (1tbsp of flaxseed to 3tbsp of water, mix well)
1 1/2c nut mylk (or soy, I used coconut)
2tbsp white vinegar
2tsp vanilla extract
3tbsp of red food colouring (I used beetroot juice)
3 3/4cunbleached flour (I used banana flour?)
2tbsp baking soda

METHOD:

1. Preheat oven to 350F (160-80C)

INGREDIENTS:

1 whole onion, chopped finely 

1 1/2 red capsicum, diced

1 tsp Chinese five spice

1/2 jar of red curry paste

1 400mL can coconut cream

1/2 cup The Raw Cane sugarcane juice

1 1/2 cups of frozen peas

4 cups of pasta of choice

 

METHOD:

 Boil water in a large pan for pasta, according to pasta directions.
